  For tracking and kerning, it's a KEYBOARD increment, not the upper and down arrows in the field.

  To set tracking with this increments, select the characters that you want to apply the follow-up to. Then hold down the Option (Mac) / Alt (Windows), and then press the arrow to the left to decrease tracking increments (you put 5 units). Press the arrow to the right to increase monitoring.

  To kern with this increase, place the insertion point between two characters. Hold down the Option/Alt key, and then press the left arrow key to decrease the kerning and right arrow to increase the kerning in increments that you defined.

  BTW, it works the same way in Illustrator.

I have a built script that can do it through to reapply the paragraph styles, but that doesn't really work for the project I'm on. I defined the word and spacing on a preset for the entire document, but keep the current styles that are applied to all. There are about 2000 files and they were all created on a 15 year + period so tried to make sure I have the correct styles names to reapply them in the script that I have I do not think is an option.
