  However, some app can use more carrots 6-8. Almost none can use all 12 cores.  When one of your apps look at the CPU tab in the activity monitor and see if you now use fully all 6 hearts.

  Hi, I can see there are a large number of threads on here about what could all boil down to the same problem, none of them seem to offer a clear explanation, or better yet a resolution.  I have an iMac 2011 with 3 TB Drive merger and all the bells and whistles that I use personally and for business.  I run parallels (11) I develop applications on Linux and Windows.  It was my first Mac and I love it.  However, given that I upgraded to El Capitan, things were not so wonderful.  My old Windows 7 VM, became very slow to respond when once it was lightning fast.  My installation of Windows 10, well... I would have written it even if it is booting.  I run no more than 1 VM at a time, unless I need for interoperability, as I tend to point applications on a laptop I keep clean for these purposes.  I clean my mac installed, but it's the only one of the garbage I have.  I don't pretend to know much about Mac, although I do not understand the underlying architecture, having worked with AIX, HP - UX, SPARC and Linux in the past.

  I can't grasp what might slow down this magnificent beast.

  Disk Boot OS & programs, including the queue page (or what we call in terms of MAC), the media on the FW800 and now it becomes difficult. Do you keep your project on the boot floppy or the FW800? I suppose that the startup disk is better from a speed standpoint, but then you will need to use the FW drive for your files to preview/zero as well. I would like to use the USB for backups and exports only. But check that if export has completed successfully on the USB key before you delete a project finished, USB can be tricky.
