  Yes.  I find it easier to type text, and then use the move tool (shortcut V) (looks like an arrow) to place it where you want.

  To bring up the character and paragraph panels go to WINDOW > CHARACTER or WINDOW > PARAGRAPH.

  Yes. You can install the 30 day demo and try it yourself. You will not be able to save files edited or created in InDesign CS5 so that InDesign CS can read. So upgrade to everyone, or do very careful about who works on the files.
