Can someone look through my .fla?  I'm confused about something.  It would help me tons.

The FLA is here: http://www.crystalfighter.com/bin/test.fla

In Flashbuilder, I can assign a Movieclip MELEE.

I can do:

clip.gotoAndStop ("WALKWEST");

clip. Anim.Play ();

Now my question is:

Where can I find the word 'anim' inside Flash Professional CC when my test.fla is open?

Based on the only code that show you, you will find it in the properties panel.

In your fla it's going to be a MovieClip, the timeline or in the library.  If you open this MovieClip for assembly you should find a calendar where an image is labeled 'WALKWEST' If you select all object is in this framework and look in the properties panel, you should see that it has an instance name of "anim" entrusted to him.
