I don't know if you ask about Safari on a Mac or on your iPhone?

Mac (OSX):

In Safari > Preferences > General > adjust remove history items according to preferences. Manual setting will keep your story until you delete them manually.

iPhone (iOS):

By default, Safari stores your story until you remove them.

NOTE: make sure that you are not in private browsing mode. No story will be saved in private browsing mode.
