  Apple pay is for the credit cards or debit; the Starbucks card is technically a 'pass' and will not appear in the Apple menu pay. You need to unlock your phone and open the application portfolio to access.

  You can probably remove and re - enter the map.  Settings > portfolio & Apple pay unless the credit card is also the default value, the one you use with your Apple ID.  In the latter case, go to settings > iTunes & App Store > Apple ID > review Apple ID > payment information to update your card information.  Yet once, you may need to remove and re-add the map here.

  It probably wasn't your bank. They ask you for the details of the account confirmed that you were you? If yes you have given access to your account to someone else. Contact your bank directly and discuss with them.

  Set up Apple pay with a debit or credit requires that you run through a security process with the issuer of your card or the Bank. Even if someone has your credit card number or debit, they would not be able to create a fake account Apple pay to run with him.   Some card issuers can automatically associate your new card with the current number of account of the device (created when your original card has been added to your device), replacing the old card. This leaves you free to continue to use the same card via Apple account pay without having to do anything yourself.

  Other issuers may ask you to remove your old card Apple pay and add the replacement as a new card.
