  I can get used to the new icons, even if I had the habit of decade toolbar icons. I can get used to the 'simplification' of some UI elements. I can still get used to these new weird buttons rounded rectangle shaped pill instead of the normal system buttons.

  OK, Bob. This give a try.

  First, open a new file and make sure the background is white, not on Transparent that I suspect you have currently defined.

  

  Then, type your copy. Your layers panel will then look like the top of this picture...:

  

  and when you drag the text on the image layer, it will look like the lower part of the sample above.

  What about aligning to a key object?

  To use a key object, select all objects to align, and then click one of the selected objects again (just click a selection tool, no shift key or whatever it is). Basically, it will get a thicker nail to let you know that it is the key object. Then clicking on align buttons align the other object to the key object without moving the object key.

  If there is another common element that is centered on the artboard, you can use it as a key item to realign all the lines of text.

  I don't know if it would be much easier in your workflow.

  You can hide the menu bar in Firefox 3.6 on Windows, on "view > toolbars" or via the contextual right click menu on a toolbar.
