How can I transfer my iPod to my MacBookAir Notes?

I have a lot of notes on my iPod and I would like to transfer them to my new MacBookAir.  How can I do this?  Seems that iTunes allows you to transfer everything except the Notes.

Sorry, I forgot to add that I do not use iCloud, do not trust him.  How can I transfer without iCloud?
