  Well, that's the whole issue of blend modes - they mix the two values in pixels. The only way to change the behavior would be to also change the bottom layer. In your case, several copies of the text tinted different colors and where the modes in different opacities of merger should do the trick. Sometimes there is no one-click solution to achieve a specific look.

  It may depend on which version of the Creative Suite 5, you bought. Photoshop Extended had some 3D features in CS3 CS6 through, but I don't think that all versions of CS included PS Extended.

  You can have the same look you mentioned. But to do 2 things.

  1. the value disabled = "true" for all the input text which will give you a non editable field, but not the same style an input text enabled
  2 customize the skin only a little for entering text like:
