I had tried before when I tried to locate the list of contacts somewhere outside Mail (sorry I forgot to mention that). But the contacts Vista file did not show this 'hidden contact' either. But further down the page, I found an answer to a similar problem. Gary van in reply to "re: delete contacts autocomplété" gave this link.

  This leads to a file called winmailmru.zip. This tool allowed me to bring up a window showing ALL the contacts which it previously 'hidden', with options to remove them. I selected and deleted. Problem solved.

It is also strange that the contact in question seems to have the ability to bypass the selection popup box that shows generally all other contacts beginning with the letter typed and force his way into the 'To' box, excluding the possibility of chooseing another contact.
