Moving from Hyper-V - conversion issues

I am planing to move to Hyper-V to VMWare

Front of the to do without a doubt we start using the free VM option vSphere Hypervisor 6

I tried move from our first with converter microsoft VM, but had a lot of questions.

So I googled and found a way to convert the virtual computer with a Starwind V2V tool, everything works fine on the conversion

The only downside is the Hyper-V virtual machine was created as stretch drive but to convert to ESXi I use is allocated (127 GB in my case)

That said, I have my three converted VM as ESXi with 127 GB each.

Is it possible that I can convert my disks growable VM?

Can I change the size of the disks somehow? all three VM is Ubuntu linux servers

I will use another tool to convert vhd disk and achieve? (extended drive)
