What does mean when the "dumpling" is gray?

CS4 on Mac.

What is an Illustrator trying to tell me when the circle on the right side of a description of the path inside the layers panel is filled with gray?

I'm sure that the circle has a name - I called him 'meatballs' in the title because I remember that one of the instructors on Lynda.com referred to her that way.

It is the symbol of target. The trainer should told you that it is linked to appearances. He tells you that he has applied special appearances (for example, an effect or a second fill or stroke). Click on the symbol for target, and then open the appearance Panel to inspect the appearances.
