  You do not press and hold.  You press VERY briefly until the icons wiggle and X in the upper right corner.  You can remove the application.  Not all applications (for example, settings, photo, Messages, pictures, clock) can be deleted.

  I guess you want to keep your cookies but not your history. You can select what is removed when you close Firefox in Options > privacy > select "use the custom settings for history".   What browser? If IE go to Tools / Internet options / general tab. Or the easiest way get ccleaner. Install and then start, close the browsers, go to the vacuum cleaner, then click on run cleaner.
