  It seems that if you try to sort on a folder that has subfolders. LR will not allow this - you must open specific subfolder that contains only these images you need to sort and to do with it.

  The projects will be treated differently. Pictures uses 'moments' as the structure of the core library. Each photo and all of its versions will be in one a time, just like the aperture projects.    But while you could move photos between projects in Aperture and name projects, the moments are created automatically.  Photos will automatically collect all the photos taken at the same time in the same place in an instant, and related moments will be a collection.   Albums do not store photos. They use and referencing the photos that are in your library. You can add a photo of your camera albums as much as you like, but the photo should stay in the camera or the album can not use it.
