  In the library in the right module, on the metadata Panel change default value for EXIF or EXIF and IPTC.

  You need LR 6.5.  When you first install LR 6, he moved to 6.0.

  Yes you can, but only if you decided to not use LR 5.

  I personally suggest you to keep 5 LR for a few more days until you familiarize yourself with LR 6 and once you have your hands on practice with LR 6 get rid of LR 5
