I've heard the 'Add purge' feature with the new Acrobat. How do I do that?

I work at a franchise "quick print", and the concept of purge appears to be totally foreign to 90% of my clients, so I always have to kludge purge using Illustrator, Photoshop, etc. Someone on the commercial print LinkedIn Group mentions that the Acrobat again, than I, has "Add purge" options. Can someone enlighten me?

There was the possibility of including substantive areas lost when printing or to adjust the area bleed document pages, but there is no option in any version of Acrobat to add actually bleed in terms of content (i.e., covering the content of the imageable area page out in the substantive area lost.
