  You must place the textfield object more to the center of the shape before you rotate or change the anchor point "Center".

  The center of rotation is the handle that is selected in the drop-down box anchor (default value is "top left").

  There is something basic that you should take into consideration.  The only time where Photoshop displays your actual images when pixels you zoom in you picture view to 100%.   If the Image zoom level is not not 100% that you don't look at your actual image.  Your viewing a version to scale your image.
