Are you meaning that the button to see the desktop? The button show desktop in Windows 7 has been moved to the far right of the taskbar. If you are talking about a different issue, please repost with more details about the problem you are having.

Windows 7. I have two monitors and want to keep the two Windows Explorer windows (list of files) open at all times, even if I click on the 'Show desktop' button in the lower right corner (the one to minimize all open windows).

Sorry Matt, who is simply not possible. The button show desktop is coded in the Explorer hard shell.
It may be possible with another program or perhaps a script, you could program to a hotkey on your keyboard. But that could be quite advanced, I'm not familiar with any script like him.

You can right click an empty area of the taskbar at the bottom of the screen, click Properties and then on the tab taskbar, properties, uncheck "Use Aero Peek to preview the desktop" after you do this, the rectangular box will always be there and you can click it to show the desktop, but it will appear with the mouse just sit there.

2. Select Properties.
3. click on the task bar.
4. under computer desktop with Aero Peek Preview.
5. uncheck the use Aero Peek to preview the desktop.

I know of a menu "desktop" like that, but it is on the taskbar.

In Vista, there are limited means of control Windows and many of those who apply to the general patterns and not to individual windows.
The following includes about what Vista can offer in this area, and I don't think that this will do exactly what you want (even if it is possible that the first option with references to other related articles can do a little of that, but I don't think that he can do everything or entirely as you wish without 3rd party help) except for the 3rd party program that winsizeme also mentioned below.
