How can I extract text on a screen capture

I can do a select color to choose all the blue text on this screenshot, but I can't seen to move text to another layer - or I can change the color of the blue text in the color of the background screenshot.   I am a beginner and I bet it's really easy.

It is very easy to do

(1) starting with the original

(2) use the rectangle selection tool and draw a rectangle around the text in blue

(3) make one layer per copy

(4) turn off the visibility of the layer map so you can see the layer that you just copied. It should be as below.

(5) for example now the background color gray into the I key and clicking. In this layer, press ctrl or command click on the layer in the layer panel and who will select all the boxes. Now, press alt-backspace or option-backspace and it will fill all boxes selected with gray background.

The layers in the Panel looks like this

(6) turn the bottom layer with the plan and the text will appear to have disappeared.

You can if you still want to change the color of the text. This implies the same method but with a few extra steps.

What you can't do, is treat text as editable as its a few pixels
