How to stop files being saved Adobe Document Cloud
My company doesn't want forms to download Adobe Document Cloud
On all, in Adobe Acrobat mobile devices (iPad, iPhone, etc.) and on Acrobat on Mac and PC, the sharing of files with the Document Adobe cloud is optional.
For example, on my iPhone, I can click on a little icon of a device with a checkbox at the top of the screen, and there is an option to "turn Mobile Link Off.
Even on Acrobat DC. Click home and at the bottom of the screen Mobile link has an on/off switch.

I can understand your concern & you need to worry about this, as the folders in your PC are not available on other PCs as this option is just to browse through files of the specific system you are working on as shown in the screenshot below.
Only the files that have been uploaded to the cloud of Document will be available over the Internet using Adobe Document Cloud service during authentication of your Adobe ID & password.

Adobe Document Cloud (clear recent files)
Regarding Adobe Acrobat Reader DC, I can erase all recent files in my application mac & windows and even on my iPhone. However, when I click on the link to access the website of adobe document cloud, I can't find the option to clear my recent files. I am a new user, so if I simply don't see it please let me know.
I like the cloud of the Document because it acts as a backup of all my paperworks and it gives easy access, as I have all the time on my phone, pc and mac. Thank you Adobe

Recent tab in Acrobat/Reader applications on mobile devices & system view recently viewed files, so its as a shortcut for easy access. If you disable recent files that your actual files are not deleted.
Where as recent files on the cloud of the document are files stored on the cloud of document. If you delete the file recorded on the document cloud will get deleted.

Open Acrobat DC, navigate to the Edit-> Preferences-> languages-> application set to "English" language
Click OK to confirm the changes.
Relaunch the application.

Can I get Adobe Acrobat Pro 11 and Adobe Document Cloud Pro installed on the same computer?

It is highly recommended by Adobe to install software on the system, either 11 Pro from Adobe Acrobat or Adobe Acrobat DC Pro. Installation of Adobe Acrobat DC Pro will automatically remove the previous version.
