I need to backup iphone on itunes if I use icloud

Hello I'm out of disk space hard and currently use icloud for our two phones and two ipads. I have backups on my Mac iTunes which is about 90 GB. What I always have these backups to local hard drive iTunes if I am using iCloud. Would like to have the extra space back.

    Problem... I bought a new iPhone 6 for my wife. I plugged the sound 5 s to iTunes to make a back up.     Due to the thinning app, apps are transferred is no longer the iPhone to the computer when you transfer data.     I have manually manage music on my iPhone with iTunes.  I used to be able to select an album in iTunes and then drag it to the iPhone to add it to the iPhone.  The only way I can get the albums on my iPhone is now, right-click and select Add to the device.  Also, I used to be able to DELETE the songs off iPhone from iTunes.  Now when I select and right-click on several songs of the devices > iPhone > music section of iTunes, the only option I get is to add to the Playist...  I can't delete songs from my iPhone from iTunes.  Any ideas.  There must be a better way than the manual removal of the iPhone.
