  One option is to put on the first page of the PDF to view the attachments Panel:

  It is not a 'locking' feature, but the suggestion of whsprague to create a snapshot is a good idea. You can always undo any changes made to the images, but a snapshot will help you to return to a specific publishing point that you liked. You can do this by right-clicking on a history point and selecting "create Snapshot":

  A license of Photoshop Elements is good for Mac and Windows, it should be just a matter of download the Mac version and using your serial number to activate it.
