The only way I seem to be able to get around this is simply by disabling all spelling and grammar correction settings, so that at least I can type in French without finding it's autocorrected it all back to English.

  This thread - pages 5 change the languages of the various paragraphs? suggests that the feature has existed in the last Pages, but is now auto - however, based on my own experience, it certainly isn't!

  Is there a work around for this maybe using Styles? Otherwise, it will be without a doubt the thing that sends me to Microsoft Word...

  5 pages has been removed and the ability to text of language tag.  For this and other similar reasons, many users have slept with or is returned to 4 Pages, which is superior in several ways, or moved to Word or LibreOffice since 5 Pages was released 3 years ago.   I recommend do you the same thing.
