Taking an HDR photo, why do you want 1, 2 or 3 F stop adjustment? One is better than the other?

When you take HDR, what advantage does different values of stop F offer. I seem to be able to set the values, and the results are similar.  When should I use a value of 1 vs 3 worth?

The idea is to extend the dynamic range of your camera.  The wider you make your efforts more wide range you can cover.  However, if you do the steps too big then the software will have problems stacking images.  Just like when you stitch a panorama of several shots, you make sure that there is a lot of overlap between the two.  2 eV (stops) has just settled on a common to use step: it works fine for programs, and it gives you good range with shooting a minimum.  I don't think that there is nothing more than that.

Insofar as you see is not a difference with 3 increments: more modern cameras - by Canon -become around 11-12 stops of DR (at ISO 100).  Shooting a shot HDR 3 with 3 levels gives you about 18 stops of the DR.  That's a lot.  Chances are the scenes that you take pictures is not that much DR, this is why you don't see much of a difference.
