Which VMWare product do need me?

I'll put up a host of virtual machines VMWare server.   I have set up for the host is CentOS 5.6 (linux) with VMWare Server 2.0.2.  It seems that the speed of the network for the virtual network adapter is limited to 10 MB.   I find instructions on how to install faster eCards with ESX, but they are not available in Server 2.  So, is there a way to force a new type of virtual NETWORK adapter to get the speed at least 100 MB, or should I buy a minimal installation of vSphere?  I will host no more 6 Server on this box.   It's a 2 GHz XENON 12 GB RAM Dell PowerEdge 2600, with an Intel Gigabit NIC if that makes a difference.

Dell PE 2600 is not certified to run ESXi, such that it could only go to ESXi 3.5. I would recommend getting ESXi 3.5 (which is free)
