  I don't think it's something built in Windows 7 x 64 (Professional at least)... Variant of Windows 7 x 64 are you running? I use Bridged networking under VMware Workstation forever, including hosts running Windows 7 x 64 and XP x 64 with the WS 6.x and 7.x version. I prefer the bridged method since I get different IP for the virtual machine (as you also mentioned wanting to). There are also a lot of advantages to having the VM to get their own, unique IP addresses.
