  Currently, we have a handful of servers (about 12), and I'm looking for a better way to manage all this, because I'm really one of the only SHE directed people where I work.

  I'm sure that VMware has a product like this, I'm not sure exactly which product to use.

  Looks like what you want is to VMware ESX or ESXi product.  These are type 1 hypervisors running on the bare metal.  According to the levels of availability you want (or can afford), you can go on VMware Infrastructure.  Have the SAN in place will also be an added bonus, when you move forward.

  Try to do a system restore: click on start, all programs, accessories, System Tools, System Restore.  Then choose the restore point from when itunes tried to install.  If this does not work, let me know and I can give you another way to do it.
