  As much as I KNOW, birthdays is a parameter all or nothing via the calendar preferences.

  You can open any Contact, you do not want to see their birthday listed and remove the entry from the anniversary. You can also copy and paste the information in the birthday field and add the Notes section in the Contacts application. This will remove it from your calendar but still available to see card Contacts.
