  This is a fairly complex issue. When was the last time you did a save slot to remove the old and inaccessible information about the changes?

  Edit: you seem to have the latest version. Hold the CMD by choosing "On InDesign" in the menu help.

  Considering that the JPEG format does not support true transparency, I would say that he must have an installed clipping path.   First of all, save as .ai rather than .eps for better compatibility and the second, make sure that the white text in Illustrator is not the value overprint. ID does not allow you to define white for a recovery and remove the attribute when you change the color from black, but Illustrator is not quite as pleasant.
